1 egg
l C. sugar
l C. peanut butter
l tsp vanilla

Directions:

Beat egg and sugar together until well combined.
Add peanut butter and vanilla. Mix until clumps together well. Place by spoonful onto cookie sheet lined with parchment paper. Use a smooth bottom glass buttered with butter ( or other ) . Press down to form small round. Dust with sugar and imprint with a fork criss crossed. Bake 12-15 minutes at 325 degrees. until solid looking and remove. Let sit until somewhat cool as they will be soft. Sitting will let them harden somewhat. These are a fast cookie to make up . Makes about 2 dozen.

Peggy was given this recipe with the note-"please do not give this recipe out"--the next month she published it in the local newspaper! Oh well, it's a great recipe for quick cookies for the kids or company at the door!
