Marinated Tofu Recipe

1 lb of firm or extra firm tofu
5 tbsp rice vinegar
3 tbsp light soy sauce
2 tbsp dark soy sauce
1 1/2 tsp Asian sesame oil
1 tsp granulated sugar
3/4 tsp chili paste
2 cloves of finely chopped fresh garlic
1 1/2 tbsp extra virgin olive oil

Dry Fried Tofu:

1. Drain (press) 3/4 - 1 lb of firm or extra firm tofu.
2. While the tofu is draining, prepare a marinade (see below).
3. Cut the tofu into triangular pieces about 1/2 inch thick.
4. Place the tofu triangles in a non-stick frying pan on medium heat, making sure they are laid out flat.
5. Cook the tofu until it is golden brown, pressing down firmly on the tofu triangles with a spatula during cooking. 6. You will hear hissing and see the water coming out of the tofu as it cooks.
7. Turn the tofu triangles over and dry fry the other side, pressing down with the spatula and cooking until golden brown. (About 10 minutes)
8. Remove from the pan. Add the dry fried tofu to marinade.

Tofu Marinade:

1. In a small bowl, whisk together the rice vinegar, light and dark soy sauce, Asian sesame oil, sugar, chili paste, garlic and olive oil. Cover and refrigerate while preparing and dry frying the tofu.
2. Place the marinade into a large bowl or large resealable plastic bag. Add the dry-fried tofu pieces. Cover bowl or seal bag and refrigerate overnight, stirring occasionally to make sure all the tofu pieces are covered.
3. Drain the tofu, reserving the marinade to use as a sauce at the end of stir-frying. Thicken with cornstarch if desired.

I love this marinade so much I often don't even get to the point of letting it marinade or even cooking the tofu. I just eat it as is. I have never tried it, but I am sure it would be yummy on meat as well.
