Russet potatoes
large white onions
salt and pepper
grease, usually bacon grease
or Crisco shortening.

In a large skillet heat the shortening. While it heats, cut up the potatoes in medium slices, and slice the onions in medium slices too. Salt and pepper. She used to use a lot of this. Cook until browned and almost done. Then add a small amount of water, turn the heat down and put on a lid and finish cooking.

These potatoes were a favorite of mine. Good in the morning with eggs and toast. At times I like to put ketchup on them.
