Ingredients:
Ingredients:
butter
olive oil
1 small onion, diced
1 cup risotto rice
1 small zucchini, diced (can use other vegetables as well, if desired)
4 cups chicken broth
1/2 cup white wine
1/4 cup heavy cream
Parmesan cheese, grated
salt & pepper

Directions:
Directions:
Sauté onion (and vegetables) in butter and olive oil until onions are glassy. Add rice and coat with butter/oil mixture, but do not let the rice get brown! Add about 1 cup of chicken broth and start stirring. Slowly add more broth and the wine, stirring constantly so that rice does not stick to the pan. This is a slow process; it generally takes about 30 minutes until the rice is cooked. Remove from heat. Add cream and grated Parmesan cheese and season with salt & freshly ground pepper. Serve immediately.
