4 tbsp. rice, boiled in salted water and drained
3 cups milk
sugar, to taste (1/4 cup)
grated rind of two lemons

Directions:

Mix all ingredients together. Pour into baking dish, sprinkle with nutmeg and a lump of butter. Brown in 325º oven for 3 hours. Stir occasionally to make creamy.
