Mom didn't follow a recipe. She would take one fresh chicken, some flour, salt and pepper, some grease, either lard, bacon grease or shortening. A large frying pan was used to cook it in.

Directions:
Directions:
She would chase down the chicken, wring it's neck, or chop it off, dunk it in scalding hot water, pull out all of the feathers.Take out the entrails (insides). Then she would roll up some newspaper, light it on fire and while holding up the chicken by its feet she would singe off the pin feathers. When this was done she would then proceed to cut it into pieces. These were washed with soap and water until clean. The pieces were then rolled into the flour mixture and put in the pan of hot grease and browned well on all sides. A small amount of water was added and a lid was placed on top of the fry pan to finish cooking the chicken until well done. Delicious!!

Momma was a wonderful cook. Her mother Martha Horman Barton was also a good cook and taught mom and her other siblings to cook well.
