"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
1 8 oz cream cheese, softened
1 cup butter, softened
1 egg yolk, slightly beaten
1 3/4 cup flour
2 Solo pie filling, 10 oz cans
powdered sugar for dusting

Directions:
Directions:
Cream butter and cream cheese until light and fluffy. Add egg yolk, mix until well blended. Add flour, mix until blended. Separate into three to four balls, flatten and cover with plastic wrap. This makes it easier to roll out and you also only take out desired amount. Chill for 24 hours, will last for up to a week in the refrigerator. Preheat oven to 400º. Flour your surface, roll out dough to desired thickness. Cut into desired shape.** Dab filling into center. Bake for 8-10 minutes, you can smell them when they are done. Cool completely. Dust with powdered sugar just before serving.

**Some people will just use a glass cup to cut shape, I prefer to roll my dough as thin as possible and I use a pizza cutter to cut. I also make them small so you can just pop them into your mouth. If you choose to make them as traditional kolacky's, dab corners with water before folding over. This helps them to stay closed. Do not let them brown, they won't look as pretty.
