Graham cracker crust for a spring pan

8 ounce container mascarpone cheese
1 tsp vanilla
1 Tbs honey
6 Tbs apricot preserves
2 Tbs warm water

Strawberries, blackberries, blueberries, raspberries, and/or kiwi

Directions:
Directions:
Prepare graham cracker crust for bottom of spring pan. Refrigerate for 1 hour. Mix mascarpone cheese, vanilla, and honey. Spread it on the crust. Heat preserves and water to thin, then cool. Cover the cheese filling with the fruit. Brush the preserves as a glaze on the fruit. Refrigerate until serving.
