Stew has to be one of my favorite foods of all time, especially during the winter! Lord knows how a nice big bowl of soup can take the chill right out of a Minnesota winter and warm you up inside. My Mother used to make a huge pot of homemade stew and let it cook in a Crockpot all day long and when dinner came she would serve it up to my Father, brother and I with homemade bread! It was super tasty and we almost always had seconds! Anyone can make a good stew. It’s easy and cheap and will feed you for at least a few days! Try it out and enjoy!

Extra Virgin Olive oil (one big lug)
Two 6 oz. beef steaks sliced into small strips or chunks.
4 medium sized Potatoes
2 large Carrots
1 Onion
1 cup of Milk
½ cup of flower
1 heaped tablespoon of butter
One good sized head of Broccoli
6 Shitake Mushrooms
1 packaged clump of Shimeji Mushrooms
1 Pack of Mixed Frozen Veggies (Corn and Peas)
2 cloves of Garlic
6 cups beef bouillon (6 cubes and six cups of water)
Black Pepper
Sea Salt (Optional if like me, you’re on a low sodium intake)
Parsley

First wash, skin and chop up your Carrots and Potatoes (Cubed is fine or in circle slices depending on your taste)~Slice up your Shitake Mushrooms and take cut off the bottom your clump of Shimeji mushrooms, set them in a bowl on the side to be added later~ Wash chop up your Broccoli heads and put them in another bowl to be added later (Broccoli and the mushrooms will cook really quickly so add them towards the end of the stew cooking process)~ Chop up your Broccoli stem and peel and chop up your onion and Garlic cloves~ Add one big lug of olive oil to a large pot and add your vegetables~ Cook on a medium heat for around 8 to 10 min, stir every now and then to prevent sticking~ Add your package of mixed frozen vegetables~ While cooking the vegetables bring six cups of water to a boil in a separate sauce pan and add your bouillon cubes (one per cup of water)~Add the bullion to the vegetables and let it boil on a medium heat for about ten min. At the same time cut and cub up your steaks and cook them in a separate fry pan~ Once the steak is cooked add it and all the delicious steak juice to the stew pot~ Then add the mushrooms and broccoli heads to the stew and bring it down to a low heat~ After a min or two add your milk, butter and flower to make a good stew rue (or add Stew rue cubes) ~ Add a good dose of Salt & Pepper and Parsley give it a good stir and let it cook on a low heat for another 10 min.


Serve it with a Roasted Cashew Tomato & Cucumber Salad. Top the stew off with crushed Saltine Crackers or as my Grandma did, with Oyster Soup crackers. If you really want to give your soup an extra special tasty touch, take thick slice of homemade bread and toast it, then melt a piece of Gouda cheese on the top and sink it into your soup!
