1/2 cup olive oil

1 tbsp. ground pepper
lemon zest
1 handful of mixed fresh herbs (such as rosemary, thyme and parsley)
2 lbs. roast beef
1 lb. small shallots
1 tbsp. vegetable oil
1/2 cup red wine
1 tbsp. vinegar
pepper
sugar

Directions:

Mix together olive oil, salt, pepper, lemon zest and herbs to make a marinade. Let the beef marinate, preferably overnight. Heat oven to 450º. Brown meat on all sides in a Dutch oven, using some of the oil from the marinade. Roast meat in oven for 15 minutes at 450º, then reduce the temperature to 400º and roast for an additional 30 minutes. Baste the meat regularly with the marinade. Peel the shallots and sauté them whole in vegetable oil. Add red wine and vinegar, cover and let simmer for 10 minutes. Season with salt, pepper and sugar. Slice the roast beef and serve with the shallots.
