2 c. frozen, chopped spinach
2 Tbsp. grated Parmesan cheese
1 c. grated, part-skim Mozzarella cheese
3/4 tsp. crushed dried basil
1/4 tsp. garlic powder
1/8 tsp. black pepper
12 large white-capped mushrooms (2-3 inch diameter)
2 Roma tomatoes, finely diced

Thaw spinach and squeeze out liquid. Mix well: spinach, Parmesan cheese, Mozzarella cheese, basil, garlic powder and ground pepper. Pulse and mix in a food processor, if you have one. Clean mushrooms and remove stems. Spray cookie sheet with nonstick cooking spray and place mushrooms cap-side down. Spoon the spinach mixture into each cap. Top with diced tomato and bake at 350º for 12-15 minutes or until heated through. You can use crab meat instead of spinach, or a combination of the two.
