2 Tbsp. butter
1/4 c. chopped onion
1 tsp. minced garlic (2 Cloves)
1 Tbsp. all-purpose flour
1 3/4 c. half & half
1 1-oz. package dry vegetable soup mix
2 9-oz. packages frozen chopped spinach, thawed, well drained
1 8-oz. can sliced water chestnuts, drained
1 c. shredded Cheddar cheese
1/4 c. shredded Parmesan cheese

Melt butter in large pan over medium heat. Add onion and garlic; cook 2-3 minutes. Stir in flour; cook and stir an additional minute. Add half & half and cook stirring constantly, until mixture boils and thickens, about 2 minutes. Remove from heat. Stir in chopped spinach, water chestnuts, Cheddar and vegetable soup mix. Spoon dip into a 1-qt. casserole dish. Sprinkle with Parmesan cheese. Bake at 425º for 10-15 minutes or until dip is bubbly and cheese is melted. Serve warm.
