1/3 c uncooked rice, Cooked
3 eggs
1 c milk
2/3 c canned pumpkin
1/3 c packed brown sugar
1 tsp pumpkin pie spice
1 tsp vanilla
1/4 tsp salt
3/4 c dried cranberries or raisens
1 apple sliced thin
1/2 c coarsely chopped walnuts toasted
2 tblsp honey

©Combine eggs, milk, pumpkin, brown sugar, spice, vanilla and salt. Stir in rice and 1/2 c cranberries. Pour mixture into baking dish. Place baking dish in baking pan filled halfway up with boiling water. Bake till outside edge appears set. Put 1/4 c cranberries into boiling water for 15 minutes, drain. Before serving, toss together apple, walnuts, honey and cranberries ad spoon over pudding. Serve warm.
