3/4 lb Monterey Jack cheese
3 c. sour cream, salted
2 cans peeled green chilies, chopped
1/2 c. grated cheddar cheese
3 c. cooked rice, salted & peppered

Directions:
Directions:
Butter 1 1/2 qt casserole. Cut Monterey Jack cheese into slices or strips. Mix sour cream and chilies. Start with layer of seasoned cooked rice, then mixture of sour cream and chilies, ending with layer of rice.

Cover and bake at 350º for 30 minutes. Then sprinkle with cheddar cheese and allow to melt in oven. This can be made ahead and kept refrigerated by adding the grated cheese and re-heating just before serving.
