2 pkg. dry active yeast
5 1/2 - 6 cups whole wheat flour*
1 tsp. salt
2 1/2 c. hot water
3 Tbsp. vegetable oil
1/2 c. honey
3-4 bananas

Directions:
Directions:
Mix together yeast, 2 c. flour and salt in large mixing bowl. Pour in hot (not boiling) water, mixing well. Add oil, honey and mashed bananas; beat with wooden spoon until thick. Add more flour while stirring until dough is thick enough to knead. Knead on lightly floured board, adding only enough flour to keep from sticking. (*I find I use more than the 6 cups flour called for.)
Knead thoroughly 10-15 minutes. Place in lightly greased bowl; cover loosely and let rise in warm oven 1 1/2 hours. Punch down. Divide into 2 well greased pans. Cover loosely and let rise again. Bake at 350º for 35 minutes until light brown. Place aluminum foil over each loaf and bake 20-25 minutes more. Remove from pan. Makes 2 loaves.
