2 cups flour (sifted)
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 egg whites
1 1/2 cups sugar
1/2 cup shortening
1 c. mashed ripe banana
3 egg yolks (add 1 at a time)
2 tsp. vanilla
1/4 c. sour milk or buttermilk

Sift together flour, baking powder, soda & salt. Beat egg whites until stiff at #8 speed on mixer. Continue beating 1/2 minute longer, while adding 3 Tbsp. sugar (taken from amount called for in recipe.) Set aside. Cream shortening 1 minute at #6 speed, continue beating at same speed while adding rest of sugar, gradually, beat 1 minute longer to thoroughly mix. Add banana and beat 1 minute longer to thoroughly mix. Add banana and beat 1 minute at #4 speed to blend. Add egg yolks one at a time, beating 1/2 minute after each at #8 speed. Add vanilla. Add flour mixture, alternately with milk, begin by beating 1/3 of flour, 1/2 milk, another 1/3 of flour, rest of milk & rest of flour. Use mixer at #2 speed, work quickly and do not overbeat, 1 1/2 minute. Fold in egg whites. Bake 30 minutes in three 8" layer pans at 350º. Ice with butter icing.
