2 lb carrots
3/4 cup sugar
2 tbsp flour
1 1/2 tsp baking powder
1 1/2 tsp vanilla
3 large eggs
1/4 cup softened butter

Directions:
Directions:
Boil carrots till tender. Drain and put in food processor, add butter and sugar. Stir till butter melts. Add all other ingredients and turn on processor till everything is well mixed and smooth. Grease (Pam) and sprinkle a little sugar in 1 1/2 qt oven proof dish. Pour carrot mixture into dish and bake about 45 mins in 350º oven till center comes clean when tested.

By putting carrots in processor after draining and still hot, they will melt the butter and sugar and make it creamier. I buy little carrots in 2 lb bag and it saves time.
