First, you roast a chicken:

1 roasting chicken
1 stalk celery (with leave
2 tbsp. black pepper
Salt (to taste)
2 tbsp. canola oil
1/4 tsp. chili powder
Garlic salt (or 2-3 cloves)
1 tsp. cayenne pepper

Directions:
Directions:
Pre-heat oven to 350 degrees.

Remove giblets from chicken. Place in broiling pan, breast-side-up and season with salt and pepper and garlic salt or 2-3 cloves inserted in cavity. Rub with oil, cover with foil tent. Roast 45 minutes and remove foil.

Combine chili powder, garlic salt, black pepper, and cayenne pepper. Rub chicken skin with mixture. Continue to roast, basting occasionally for 1 to 1 1/2 hours.

Check chicken doneness by placing fork in thigh of chicken. If juices are clear, it is pretty much moist and done. If uncertain, taste small slice on back of chicken. Temperature should read 180 degrees. Let stand 10 minutes before serving.
