1/2 lb bacon
1/2 cup chopped onion
2 Tbsp. all purpose flour
2 Tbsp. sugar
1 1/2 tsp salt
Dash of pepper
1 tsp celery seed
1/2 cup vinegar
1 cup water
6 cups sliced, cooked potatoes
2 hard cooked eggs, sliced (optional)
Parsley
Bacon curls

Directions:
Directions:
Cook bacon until crisp; drain and crumble
Reserve some bacon for garnish
Reserve 1/4 cup bacon fat
Cook onion in reserved fat
Blend in flour, sugar, salt, celery seed, dash pepper
Add vinegar and water and cook until thick and
bubbly
Add bacon, potatoes and eggs
Heat thoroughly and toss gently
Garnish with parsley and reserved bacon
