3 pounds uncooked fresh jumbo shrimp, peeled and deveined
1 pound center cut bacon (thick cut)
1 can pineapple chunks (can also use fresh pineapple)
Cajun seasoning
Round toothpicks soaked in water for 30 minutes

Directions:
Directions:
1. Cut bacon strips in half or into thirds if you are not using jumbo shrimp.

2. Place one shrimp on end of bacon and roll over 1 ½ times. Place a chunk of pineapple in the middle and stick a toothpick through; place on a baking sheet. Repeat process.

3. Sprinkle Cajun seasoning on each and grill until bacon is crispy, turning once. On a hot grill these will only take a few minutes each side – don’t overcook.
