1 1/2 lbs. ham steak, sliced 2-3" thick

For the Gravy:
Bacon grease
1 cup chicken broth, divided use
3 tbsp. strong brewed coffee (or more according to taste)

1 cup grits, cooked (buttered, salted, and with a dash of Tabasco)

Makin' the Gravy:
Use bacon grease as the base. (Yes sinful, but really not an option in this recipe. I mean, how often do you have red-eye gravy anyway?). Get grease very hot. Turn ham quickly to brown both sides (for color). Add 1/2 cup chicken broth, which will sizzle. Turn down heat immediately. Add the coffee and cover. Add the other 1/2 cup chicken broth. Add more coffee at this point if you'd like, but do so 1 tablespoon at a time and taste (you don't want the coffee to overwhelm, just enhance).

Serve with the grits. The complete meal includes mustard greens, cornbread, and wilted salad.
