2 tbsp. green onion, finely chopped
1 clove garlic, minced
1 lb. young zucchini, cleaned, sliced thin
2 tbsp. butter
1 tsp. curry powder
1/2 tsp. salt
1/2 cup whipping cream
1 3/4 cup chicken broth

Directions:
Directions:
Steam/simmer green onion, garlic and zucchini in the butter for about ten minutes, covered, until just tender. Shake the pan occasionally to prevent sticking. Place mixture and remaining ingredients in blender for 30 seconds. Serve either hot or cold.

This freezes well, but if you are going to freeze it, omit the addition of the cream until serving time.
