Ingredients: 1 lb. pkg. Great Northern Beans 1 large white onion, chopped 2 cloves garlic, finely chopped Olive oil 3 green onions, chopped 6 or 7 cups hot water (mixed with 1 tbsp. chicken granules) 1 ham bone (with some meat to be chopped) 3 bay leaves 2 tsp. dried thyme Salt (to taste) Pepper (to taste) 3 tbsp. heavy whipping cream 1 tbsp. soda Chopped chives or green onions for garnish

Directions:Soak beans overnight. Or, if you're pressed for time, put beans in a large pot of water, bring to boil, remove from heat, cover and let set for two hours. Pour off soaking water.
In a large pot, saute white onions and garlic in olive oil until softened (avoid browning). Add green onions and let wilt. Pour water slowly over contents and heat to boil. Add beans. Turn heat to medium-high stirring to mix seasonings. Add ham bone and bay leaves and bring to boil. Reduce heat and skim off foam. Stir in thyme, salt and pepper to taste, cover and turn heat down to medium. Let simmer for about 2 hours, stirring occasionally. Adjust heat if soup is cooking at more than a simmer. Stir in heavy cream and soda, then serve. Garnish with chopped chives or green onion top.
Note: There is always a recipe on the bag of beans. They are basic, but can be very helpful. |

Notes: This was my mother Pearlie's recipe which I modified slightly. It's great to have in the freezer to heat up on busy days.
And speaking of the freezer: It's also good to have a list of contents in the freezer: soups, main dishes, casseroles, etc. Being able to grab something and pop it in the oven is a life-saver!
This is also famously known as "Senate Soup." I know it is a favorite of the Senate Group, as I'm sure they have a secret too!
