1 lb. pkg. lentil beans
2 cups chicken broth (or more for thinner soup)
1 tsp. salt
1 large onion, finely chopped
1 green pepper, finely chopped
1/3 cup olive oil
2 cloves garlic, finely chopped
1/2 lb. smoked sausage, cut into bite-sized rounds
Salt (to taste)
Lemon-pepper seasoning (to taste)
3/4 cup orzo pasta
1/8 cup lemon juice
1/2 cup parsley, chopped

Directions:
Directions:
Wash lentil beans thoroughly. Place beans in a large pot, add chicken broth, then add enough water until liquid is 1 inch above beans. Add salt and simmer until beans are soft; about 1 hour. Saute onion, garlic and green pepper in olive oil until soft then add them to the soup.

Brown sausage in a skillet. Add water to cover bottom of skillet. Cover and cook 20 minutes on low heat.

Add sausage to soup. Add salt and lemon-pepper. Continue simmering and add additional chicken broth if soup is too thick. Continue to cook 45 minutes. Add the orzo pasta and cook until pasta is done. Just before serving, add lemon juice. Sprinkle servings with chopped parsley.
