2 cans beef consommé
2 hard-boiled eggs
3/4 cup chives or green onion tops, chopped
Thin lemon slices (for garnish and seasoning)
Melba toast, crackers, or crusty fresh bread

Directions:
Directions:
Divide each can of consommé between 2 ramekins (so you will have 4 ramekins total). Place halved, hard-boiled eggs face-down in ramekins. Consommé will be thick, but not totally jelled. Sprinkle and gently swirl chopped chives. Chill to jellied consistency. Serve with lemon wedge, Melba toast, crackers or bread with hard crust.
