6 medium carrots, skinned and chopped
1 small onion, chopped
1 small bay leaf
2 tbsp. butter or margarine
3 cups chicken stock
2 tsp. sugar
Salt and pepper (to taste)
1 tbsp. lemon rind, grated
1 tbsp. dill, chopped
5 tbsp. whipping cream
1 tbsp. fresh parsley, chopped

Directions:
Directions:
Cook carrots, onion and bay leaf in pan with butter. Cook over low heat until carrots are tender. Discard bay leaf. Mash carrots with potato masher. Put the chicken stock, sugar and salt and pepper in a large saucepan and slowly blend in the carrot mixture. Add remaining ingredients. Slowly reheat and serve.

It's best to allow this soup to set before serving to enhance the flavor.
