1 bunch fresh asparagus, cut in approximately 2" pieces
6 cups chicken broth
2 cups White Sauce (see recipe)
1/4 cup white wine, dry sherry, or vermouth
Salt and pepper (to taste)

Directions:
Directions:
Steam asparagus 4 minutes. Remove 3/4 of bunch, then leave remaining asparagus to cook until soft. Once softened, remove asparagus and blend in blender or food processor. Put the chicken broth in a large saucepan over medium-low heat. Add pulverized asparagus, reserved asparagus, white sauce, white wine, and seasonings to taste to the broth. Bring to a low boil, then serve.

My first encounter with asparagus was during the first dinner I served Joe as a married couple, asparagus on toast. After he devoured it, he asked, "What's next?" After the flow of tears he said, "It's OK, honey. It has at least spoiled my appetite!"
