The Basics:
3 tbsp. corn oil
2 corn tortillas, cut into strips
4 cloves garlic, finely chopped
1 cup onions, pureed
2 cups fresh tomatoes, pureed
1 tbsp. cumin
1 tbsp. tomato paste
1 bay leaf
1 tsp. chili powder
2 qts. chicken stock
Salt (to taste)
Black pepper (to taste)
Cayenne pepper (to taste)

Optional addition:
2 cooked chicken breasts, cubed

Garnishes:
1 avocado, cubed
6 oz. Cheddar cheese, grated
3 corn tortillas, cut into thin strips and fried

Directions:
Directions:
In a large pot, heat the oil and saute the tortillas with garlic. Add onion puree and tomato puree and bring to a boil. Add cumin, tomato paste, bay leaf, chili powder and chicken stock. Bring to a boil again. Add salt, pepper and cayenne pepper to taste and cook slowly 1.5 hours. Strain. If using chicken, add in and reheat. Place soup in bowls and have garnishes ready for guests to add.
