2-3 Lbs baby red potatoes
2-3 Lbs baby white potatoes
1 cup olive oil
5-6 cloves of garlic, smashed and chopped
Lots of fresh, cracked pepper
Few red pepper flakes
Salt (to taste) I use about 2 tsp kosher or sea salt
Small jar roasted red peppers

Directions:
Wash and cut potatoes so all are approximately same size. Add remainder of ingredients, except roasted peppers. Bake in large roasting pan in a single layer covered loosely with foil for 30 minutes at 400º. (Check for doneness with fork-it should enter potato easily, not break it apart) Add roasted peppers, cut up. Return to oven, bake for another 10-15 minutes without foil, until skins crisp.

This recipe is great for a crowd, especially with barbecue. It can be made the night before and just put in oven for about 15 minutes with loose foil to heat up. Then, add roasted peppers, bake for an additional 5-10 minutes without foil and serve.
