4 Tbsp. (1/2 stick) butter
1-1/2 lb. small white or fingerling potatoes, scrubbed
2 tsp. Kosher salt
1/2 tsp. freshly ground black pepper
3 Tbsp. chopped herbs: parsley, chives, or dill

Directions:
Directions:
Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes and salt and pepper and toss well. Cover pot tightly and cook over low heat for 20 - 30 minutes, until potatoes are just tender. From time to time, shake the pot without removing the lid to prevent bottom potatoes from burning. Turn off heat and allow potatoes to steam for another 5 minutes. Don't overcook! Toss with herbs and serve hot.
