3 boxes herb stuffing mix (cubes)
3/4 cups (or more) onion, chopped
1-1/2 cups celery, chopped
2 large apples, chopped
3/4 cup pecans, chopped
3 sticks butter (1-1/2 cups)
3 cups turkey or chicken broth
Salt and pepper

In a large, deep skillet, melt butter and add onion and celery. Sauté over medium-low heat until soft but not browned, about 10 minutes. Add chopped apple and pecans and cook for about 5 minutes more. Into a VERY large bowl or roasting pan, pour the herbed stuffing cubes or stuffing mix and toss well with the sautéed veggies. Add broth a little at a time until stuffing achieves the desired consistency. Salt and pepper to taste. Bake in baking dishes or muffin cups in a 350º oven until browned.

Nana Andy always made her own turkey broth on Thanksgiving morning. I'll admit to using Swanson's Low Sodium Chicken Broth. I stuff the bird with celery, onions, and apples. Quartered citrus is good, too.
