3-1/2 lb. Yukon Gold potatoes, peeled and cubed
1 (12 oz.) can evaporated milk
3/4 cup Parmesan cheese
2 Tbsp. butter
2 Tbsp. chopped chives
3/4 tsp. salt
1/8 tsp. pepper

Preheat oven to 350º. In pot, boil potatoes in salted water until tender, about 20 minutes. Drain; return to pot. Mash. Beat in remaining ingredients. Coat a 1-1/2-quart baking dish with Pam. Spread 1/2 the potato mixture in the dish. Transfer remaining mixture to pastry bag fitted with large star tip; pipe potatoes onto top of those already in the baking dish, making a decorative pattern. Bake until hot and slightly browned, about 25 minutes.
