4 eggs plus 1 egg white, whisked
1/2 can sliced white potatoes
1 red onion, sliced
2 cups frozen spinach, defrosted and drained
1 cup frozen broccoli, defrosted and chopped
Shredded cheese, any type
Salt, pepper, garlic powder, to taste

Directions:
Directions:
Preheat oven to 400º

In a large skillet, saute onions until translucent.
Add spinach and broccoli and heat over medium flame.
Mix in potatoes, salt, pepper, and garlic powder.

Coat an 8x8 tin pan with cooking spray.
Add vegetable mixture to pan.
Pour eggs over vegetable mixture and sprinkle cheese on top.
Cover with tinfoil and bake for 20 to 25 minutes.
Frittata is ready when the center is no longer soft.
