1/2 c. shortening 1/2 c. butter
1 c. brown sugar, packed 1 c. white sugar
2 eggs 2 tsp. vanilla
2 1/4 c. flour 1 tsp. baking powder
1 tsp. baking soda 1/2 tsp. salt
2 c. quick oats 1 c. sweetened flaked coconut
10 oz. pkg. Heath bits, optional

Directions:
Directions:
Cream shortening and sugars together until fluffy. Add eggs and vanilla. Mix until combined. Gradually mix in flour, soda, baking powder and salt. Stir in oats, coconut and Heath bits. Shape into 1" balls. Place on greased cookie sheets. Flatten slightly with damp cup. Bake at 350º for about 15 minutes, or until edges start to brown. Makes about 7 dozen.
