1 green pepper, chopped
1/2 onion, chopped
1/2 cup sliced celery
1 clove garlic, minced
2 T. cooking oil
1 (6 oz.) can tomato paste
1 1/2 cup water
1 bay leaf
1/2 tsp. pepper
1 tsp. salt
1/4 tsp. thyme
2 cups cooked shrimp

Directions:
Directions:
In skillet, cook green pepper, onion, celery and garlic in oil until tender. Stir in tomato paste, water, bay leaf, pepper, salt and thyme; simmer 15 minutes, stirring occasionally. Add shrimp and simmer until heated through. Remove bay leaf. Serve over cooked rice.
