1 1/2 cups oil
2 cups sugar
4 eggs
3 cups ground carrots
1 cup nuts
2 cups flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon

Frosting:
2 cups powdered sugar
1 (8 oz.) pkg. cream cheese, softened
1/2 cup oleo
1 tsp. vanilla
1 1/2 tsp. lemon juice
1 tsp. almond extract

Directions:
Directions:
Cream eggs, sugar, oil. Sift flour, salt, baking soda and cinnamon. Add to creamed mixture. Stir in carrots and nuts. Pour into 9 x 13 inch baking pan sprayed with cooking spray. Bake at 350 degrees for 45 minutes. Cool cake and frost.

Personal Notes:
I like to replace half the oil with applesauce, so that means 3/4 cup oil and 3/4 cup applesauce. Makes for a lighter cake. Also you can use baking Splenda for the sugar--one cup splenda replaces one cup sugar. If you haven't used it before, be SURE it's to be used to replace sugar in recipes to be baked. Works great.
