1/2 cup oil
1 egg
2 tsp. vanilla
1 cup buttermilk or sour milk
1 1/2 cup chopped rhubarb
1/2 cup chopped nuts
2 1/2 cups flour
1 tsp. soda
1 tsp. baking powder
1/2 tsp. salt

Topping:
1 tsp. oleo
1/3 cup granulated sugar
1 tsp. cinnamon

Use cupcake liners or grease muffin tins. Put a little topping on each muffin. bake at 350 degrees for 20 to 25 minutes.
