1 cup bulgar - cover with water and drain a couple times. Let soak until softened to the texture you like (chewey). Drain well.

Add:
diced cucumber (seeds removed). Leave some skin on for color, diced tomato (handful of cherry tomatoes or 2-3 Roma). 1/2 bunch parsley, chopped well. Several green onions diced, lemon juice from Med. lemon (I just use reallemon juice in the green bottle), Italian Dressing (I use Kraft Zesty Italian) to moisten. Salt (optional)

Eat with crackers or chips. Or top a green salad with it for a healthful meal.

Bulgar is toasted cracked wheat. It can be purchased in health food stores or most grocery stores.
I got this recipe from a friend of mine who loves healthy recipes and tries alot of different things. The Tuscan Bean Dip found elsewhere in this book is also from her.
