2-1/2 cups canned diced tomatoes
1 tsp. minced onion
1/2 cup chopped celery
3/4 tsp. salt
2 tsp. brown sugar
1 tsp. chopped parsley
1 Tbsp. butter
(1/2 cup bread crumbs - optional)

Directions:
Directions:
Simmer tomatoes in a heavy pan over slow heat for 10 minutes. Add onion and celery, stirring occasionally to keep from scorching. Season with salt, brown sugar, and parsley, and butter. Simmer for about 5 minutes. Add bread crumbs, if desired, for a thicker vegetable mix.
