4 chicken cutlets
2 Tbsp. vegetable oil
1 Tbsp. butter
1/4 cup vodka
1/2 cup chicken broth
2 Tbsp. fresh lemon juice
1/2 cup tomatoes, chopped
1 Tbsp. heavy cream
1/3 cup minced scallions

Directions:
Directions:
Season cutlets with salt and pepper and then lightly dust with flour. Spray a sauté pan with Pam and then add the vegetable oil and 1 Tbsp. butter and heat to medium high.

Sauté cutlets in hot oil and butter 2 – 3 minutes on each side with the pan covered. Cutlets should be lightly browned. Transfer cutlets to plate and keep warm.

AWAY FROM FLAME, deglaze pan with vodka and cook until vodka is almost gone. Add the broth and lemon juice. Return cutlets to pan and cook for one minute on each side. Remove cutlets from pan place on a warm plate.

Finish the sauce with tomatoes and cream (and more vodka, if you like). Heat through and then pour over cutlets. Garnish with scallions.
