4-5 lb. potatoes
1 tsp. sea salt
1/2 tsp. ground pepper
1 8-oz. package cream cheese at room temperature
1 c. sour cream at room temperature
1/4 c. butter, in pieces

Directions:
Directions:
Preheat oven to 500º. Peel and quarter potatoes. Boil in plenty of salted water until tender; drain. Add salt and pepper and mash well. Set aside.

With an electric mixer, beat cream cheese and sour cream until smooth. Combine mashed potatoes with the cream cheese mixture. Then smooth the mixture in a buttered dish. Dot the top with butter pats. Stop here if you are preparing ahead of time.

Bake 30-45 minutes.

A few years ago, in an effort to regain my former slim self, I began eating few carbohydrates. How I missed them. I even dreamed about eating them. And mashed potatoes were my favorite. Yet my resolve prevailed and I was having some success. Traveling to the meetings of the now defunct Commission on Religion in Appalachia (CORA) always meant a trip south. And as a CORA Commissioner for ELCMA, Monroe would be at these meetings. Dinners were particularly difficult for me because there were few good options. Monroe, the ever helpful man, even offered to share his favorites with me. They too, were poor choices, and often of the potato variety. That devilish man! So it is fitting that he would offer a mashed potato recipe.
