1/2 cup hot water
1 pkg. active dry yeast
1-1/3 cups warm water
1/3 cup brown sugar
5 cups flour
Extra flour
Coarse kosher salt
Baking soda

Directions:
Directions:
Heat oven to 475º. In a large bowl, mix the hot water and yeast until yeast dissolves. Stir in warm water and brown sugar. Slowly add 5 cups of flour to the mixture, stirring constantly. Continue stirring until the mixture is smooth and does not stick to the sides of the bowl. Place dough on a lightly floured board and knead until it is stretchy and smooth.

Grease two cookie sheets very well. Sprinkle each with kosher salt and set aside.

Pinch off a piece of dough (golf ball-sized). Roll and twist into a pretzel shape. Fill a frying pan with water; add 1 Tbsp. of baking soda. Bring to a gentle boil. Using a spatula, lower each pretzel into the water and count to 30. Lift each pretzel onto the prepared cookie sheets. Repeat until all the dough is used.

Sprinkle more salt on top of the pretzels and bake then for 8 minutes or until golden.
