Ingredients: 4 cups flour 3 tsp. baking powder 1 tsp. salt 1 tsp. sugar 3/4 cup shortening 1-3/4 cup milk

Directions: |
Directions:Sift flour and dry ingredients into mixing bowl. Add shortening and milk and work with hands on lightly floured board. Roll out and cut with biscuit cutter. Bake in a 400º oven for 10 - 12 minutes until browned. |

Notes: The San Jacinto Inn opened in 1919 near the Battleship TEXAS. It was well known for its family-style dining and its fluffy biscuits. Before the restaurant closed in 1987, owners distributed their popular biscuit recipe to patrons. I still have my copy, printed on the Inn's distinctive green recipe cards.
Renowned for their prix fixe dinners served family style, the Inn specialized in all-you-can-eat seafood. As we were seated on our first visit there, Margaret (age 10) announced that the only kind of seafood SHE liked was tuna fish. Will (age 5) added that the only kind of seafood HE liked was oyster crackers.
