2 large eggs
1 c. milk
2 Tbsp. sugar
1 tsp. baking powder
1 Tbsp. oil
1 1/2 C flour
1 C powdered sugar
Vegetable Oil for frying

Directions:
Directions:
1. Heat oil in electric frying pan to 400º. 2. Place eggs, oil, sugar, baking powder, and milk in jar of blender. Beat on low to blend thoroughly. 3. Gradually beat in flour... a little at a time... until the mixture is smooth. 4. Pour approximately 1/4 c. of the batter into the funnel, keeping finger over the opening. 5. Hold funnel over the hot oil, remove finger, and swirl the batter starting in the center and working outward in a spiral pattern. Then release the rest of the batter across the spiral to form a lacy pattern. 6. Fry for 1-2 minutes on each side until they are golden brown using tongs and slotted spoon to turn funnel cake once. 7. Drain on paper towels. Place powdered sugar in a sifter and sprinkly over the funnel cake. 8. Eat and enjoy.
