12 whole small red round potatoes
Olive Oil
Kosher Salt to taste
Black pepper to taste
Rosemary (or any other herbs of choice) to taste

- Bring a pot of salted water to boil. Add in as many potatoes as you wish to make and cook until they are fork tender.

- On a cookie sheet pan, generously drizzle olive oil (this keeps the potatoes from sticking). Place tender potatoes on the sheet leaving plenty of room between each potato.

- Put an "X" in the top of each potato with a knife. With a potato masher, gently press down on each potato until it is slightly mashed (little less than 1/2 way). Rotate the masher 90º and mash again (resembles a cookie). Brush the top of each crushed potato generously with more olive oil.

- Sprinkle the potatoes with kosher salt, fresh ground black pepper and chopped rosemary (or chives, or thyme, or whatever). Be generous!!

- Bake 450º for 20-25 minutes until golden brown.

You can make as many or as few potatoes as you wish with this recipe. I prefer to steam the potatoes in my Pampered Chef microwave steamer instead of boiling them on the stove (saves a lot of time!). Be careful not to overcook your potatoes (although they still taste great the presentation isn't quite as good).
