8 – 10 small yellow squash (amount can vary)
1 egg
1 onion, chopped
1/2 sleeve of saltine crackers
1/2 stick of butter
1 cup sharp cheddar cheese, grated

Directions:
Directions:
Slice squash into 1/4" rounds and boil with chopped onion until very soft. Drain. Add 1/2 stick of butter and 1 egg. Stir immediately so egg doesn't cook. Crush the saltines into the squash mixture. Add 3/4 cup of grated cheddar. Mix with electric mixer for a smooth consistency; mix by hand for a chunky consistency. Spoon into baking dish; sprinkle the rest of the grated cheese on top and bake at 350º for 20 minutes.
