2 tbsp. Olive Oil salt to taste
1 c. finely chopped onion hot sauce to taste
1 c. finely chopped fresh parsley
1 c. finely chopped green onions
1 c. finely chopped bell pepper
1 tsp. crushed dry mint
2 cups peeled, chopped fresh tomatoes
1 c. tomato sauce
2 tbsp.minced garlic
2 tbsp. soy sauce
1 c. dry white wine
1 lb. smoked sausage, 1/4 inch thick sliced
10 cups fresh okra, 1/4 inch thick sliced

In large high walled skillet, heat olive oil over medium heat, saute onions, parsley, green onions, bell peppers, and mint until onions are clear. Stir in tomatoes, tomato sauce, garlic, soy sauce, wine and sausage, cover, cook over medium heat until it comes to a boil, stirring occasionally. Stir in okra, salt, and hot sauce, reduce heat to low and simmer covered, stirring occasionally until okra is tender. About 45 minutes.

This makes a lot, but is so good it won't last long. Great with the cajun/Mexican cornbread.
