2 c. cornmeal
1c. flour
3 tsp. baking powder
1 1/2 tsp. salt
1/4 tsp. soda
3 tbsp. bacon drippings or shortening
3 eggs
1 cup whole kernel corn, drained
1 c.grated cheddar cheese
1 tbsp. chopped fresh jalapeño pepper
2 tbsp. finely chopped onion
1 to 2 c. buttermilk
2 tbsp. bell pepper

Use large iron skillet. Mix dry ingredients in bowl really well. Heat drippings or shortening in skillet. Add cheese, peppers, onions to dry mix and mix well. Beat hell out of eggs, pour 1/2 of buttermilk into eggs and mix well. Pour egg mixture into dry ingredients and beat well. Add rest of buttermilk as needed. Pour shortening from skillet into mixture and beat well. Pour batter into skillet, bake at 350º until browned. Flip cornbread over in skillet, turn oven off, put bread back in oven for a few minutes,
