4 cups refried beans
1 cup butter
1/2 lb. Provolone cheese, shredded
1 Tbsp. chopped garlic
4 to 6 jalapeņo peppers (canned), seeded and chopped
3 tsp. jalapeņo juice
2 Tbsp. minced onion

Place all ingredients in the top of a double boiler. Cook over medium heat until cheese is melted and mixture is smooth. Serve with tortilla chips. This recipe freezes well.

According to the woman who gave me this recipe, Prairie Fire is a "secret recipe," known only to the occasional fortunate gourmand. In reality, it's just a tasty variation on the usual refried bean recipe. I've found it popular as an appetizer as well as an accompaniment to a Mexican dinner.
