1 c. white rice
1 1/2 c. lightly steamed green peas
1 lb. crabmeat substitute
6 sticks celery hearts, diced
1 red sweet pepper, diced
1 green sweet pepper, diced
1 red onion, or Vidalia, diced
1 can black olives, sliced
1 8-oz. bottle Italian dressing
3 bunches green onions, chopped
Salt
Pepper

Cook rice according to directions. Combine rice and all the above ingredients and mix well. Add Italian dressing to taste. Salt and pepper to taste. Best chilled.

Monroe found out that I was taking a vacation to the beaches of South Carolina. He was adamant that I visit "Flo's" in Murrell's Inlet. So when I arrived, off I went to find this wonderful restaurant. My taste buds were salivating as I anticipated a scrumptious dinner. When I arrived, the place looked a little run down. But I trusted Monroe so I pushed on. Up the rickety plank I went, into the darkened room. Loud noises were in the air. Smoke wafted toward me, a non-smoker. Yuk! When my eyes adjusted, I beheld a dreary, dank smelling room of tables filled with fishermen and bikers. It was as if I was breaking in on a family celebration because everyone seemed to know everyone else, yet many were strangers. Perhaps it was the beer that made everyone family? But, it was easy to see why Monroe felt at home with such comradery and why I slowly backed out the door into the sunlight.
